Dr Tom Lewis

Dr Tom Lewis has worked in the Australian food sector – in technical, management and industry leadership roles – since the early 1980’s.
Tom’s professional focus is on fostering collaborations to build value into primary products as close to the farm gate as possible. He currently holds project development roles for Fermentas (an industry-led cluster established to building capability, share knowledge and create connections between Australian manufacturers of fermented food, drink and other products); the Centre for Food Innovation (a UTAS-CSIRO-Defence research collaboration bringing commercial microwave-based sterilisation and pasteurisation technology (‘MATS’ and ‘MAPS’) in Australia); and The Allergen Bureau (an industry-led, not-for-profit company established to provide information, resources, practical tools and industry contacts for the better management of food allergens).
Tom has a PhD in the microbial production of omega-3 fatty acids and technical experience spanning food safety, fermentation and aquaculture. He has been a Director and senior consultant for industry development firm RDS Partners since 2005, through which he has worked widely with food industry enterprises across private, research, academic and government sectors.
